Rosh Hashanah recipes

Fishbein0810Last year around Hanukah, we spoke with Susie Fishbein about holiday traditions. With Rosh Hashanah approaching, Manischewitz tapped the author of the "Kosher by Design" series for more holiday recipes ideas. Here are two you might be interested in, courtesy of Manischewitz:

INDIVIDUAL PEACH NOODLE KUGEL

                        Preheat oven: 350 degrees        Cooking Time: 35 minutes

Serves: 9 Mini-Kugels

Non-stick cooking spray

1 tablespoon sea salt

1 (12- ounce bag) Manischewitz® Premium Enriched Wide Noodles

6  eggs

½ cup sugar

1 (8- ounce) can pineapple chunks, with juice

1 (15- ounce) can diced peaches, with juice

1/4 cup sweetened dried cranberries

4 tablespoon margarine

1 tablespoon cinnamon

2 tablespoon sugar

1.  Fill a large pot 3/4ths of the way with water. Add 1 tablespoon of salt.  When the water is boiling add the noodles and cook, as per directions on the package until al dente. 

2. If using ramekins, spray each one with non-stick cooking spray.  While the noodles cook, crack the eggs into a medium mixing bowl. Add the sugar and the juices from the cans of pineapple and peaches. With an electric mixer, beat until combined and foamy.

3. Add the pineapple chunks, diced peaches, and cranberries. Stir with a wooden spoon or silicone spatula.

4. When the noodles are done, drain them and return them to the pot. Add the margarine and allow the heat from the noodles to melt the margarine, stir to combine.

5. Pour the egg mixture into the pot and toss to combine.

6. Ladle the noodle mixture into the ramekins or parchment cups. Place them on a parchment lined baking sheet.

7. In a small bowl mix the cinnamon with 2 tablespoons sugar. Sprinkle evenly  over the top of each kugel.

8. Bake, uncovered, for 35 minutes. If you don’t like a crunchy top, bake the kugels covered.

Try this delicious confetti cake, made delicious with Manischewitz frostings:

CONFETTI CAKE

Non-stick cooking spray with flour in it

1 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

2/3 cup soymilk

1 teaspoon pure vanilla extract

1 large egg

4 tablespoons margarine

3 tablespoons colored non-pareils

Manischewitz Pareve Frosting (in Vanilla or Chocolate)

1.       Preheat the oven to 350°F and coat the baking pan with nonstick cooking spray. 

2.       In a large mixing bowl, combine the flour, sugar, baking powder and salt.  Add soymilk and the vanilla.

3.       Crack the egg and add it to the bowl.

4.       Melt margarine and then allow it to cool for 5 minutes so it doesn’t melt the non-pareils when you add them.  Add the margarine to the batter.  Beat for 3 minutes.

5. Add the non-pareils.

6. Beat with an electric mixer until just combined and creamy.  Pour the batter into the prepared pan.

7. Place the pan into the oven and bake for 30-35 minutes.  When you stick a toothpick into the center of the cake, it should come out clean.

8. Remove the cake from the oven and let it cool for 10 minutes in the pan.

9. Frost with Manischewitz Vanilla Pareve Frosting and shake on more non-pareils.
